I know you're thinking this combo is kinda weird and might not taste so good. Let me assure you, I felt the same way before I tried it.
However, this watermelon and olive salad with feta and mint is surprisingly delicious. The juicy and sweet watermelon pairs incredibly well with the creaminess of the feta and the saltiness of the olives. It's a rich flavor profile for such a simple salad.
I had this salad for the first time two weeks ago at one of my very favorite restaurants in Nepal, Chez Caroline. If you find yourself in Kathmandu, I fully recommend having lunch or dinner there - the chocolate profiteroles just about kill me every time. But since I don't yet know how to make profiteroles, I'm sticking with featuring this salad recipe.
The true key to this salad is a very ripe watermelon. From May till August, watermelons are at their peak, and the one I found today did not disappoint!
