These hand rolled vegan temaki are incredibly versatile and also tasty. I choose to go with a green on green on green theme (Jalapeños, avocado, cucumber and coriander), but these could just as easily be stuffed with bell peppers, carrots, sweet potato, asparagus, cabbage, etc. Brown rice is the new black - it goes with everything.
So, there's a lot going on right now in the US, and I had a long political essay written out for this blog post, and then I deleted it. Not because politics aren't important and not because I don't have ALL THE FEELINGS & THOUGHTS about what is happening right now, but because this is first and foremost a food blog called Shiny Happy Bright. This is my safe space. And I hope it can be for you too. On this blog I celebrate fruit and veggies, sometimes cocktails, and probably a little-too-often puff pastry. I also tell small stories or give little updates - because there is beauty in the mundane that surrounds us. I'm making a conscious choice to say - you are welcome here and I STILL believe that there is more than unites us than divides us. That goes for all of you - if you are from the US, the UK, Australia, Germany, France, Canada, Mexico, Qatar, Jordan, New Zealand, South Africa, Lebanon, or one of the many other countries that pop up in my Google analytics! :) I'm thrilled that there is a strong international readership of Shiny Happy Bright - it's a joy because of my own international background.
So, dear reader, even though you are probably also deeply invested in politics and care about what happens in your community and country, we can still savor one of life's greatest joys - very good food - and that is what I will continue to offer.
