Salmon with Blueberries
I have been making this salmon with blueberries recipe for years. It's one of those great recipes that's pretty simple to make, but has people oohing and aahing.
I also like to put fruit on everything, and this speaks to the part of me that feels I should be eating at least a cup of blueberries each day. I always try to talk someone into going blueberry picking with me each summer when I'm on vacation and back in the Midwest. My sister humored me once and we ended up picking two large pails - or about 25 cups of blueberries. For the rest of the week, I gave Ziploc bags of blueberries out as gifts. Pro tip: when giving out blueberries, give people at least three cups - it's enough to make a pie...
