My favorite green salad is lush, you guys. It's really and truly delicious; it's got crumbled pecorino, rich panko, soft butter lettuce, a a bright jolt of red spring onions. It's the perfect almost-spring salad.

I've had a very similar version of this salad several times at a creative little restaurant in Rochester, Minnesota called Zzest. Whenever we visit my husband's parents in Rochester, I have to eat there. Everyone always seems to order the salad that's the inspiration for this one - the only real difference is that they serve it with little gem lettuce (which has a delightfully crunchy bite, but is harder to find in grocery stores).

I've been watching a lot of pottery videos lately for inspiration. Last week at pottery I made a garlic roaster, it needs to be trimmed to have a nicer shape, but I was pretty excited to make my first piece that's a double (plate and roasting lid) out of one piece of clay.

For this salad, I found red spring onions at the store (yay, spring is coming soon!), but you can easily make it with regular red onions. It will still have a great kick! I hope you enjoy this recipe!
