You don't need much to make this recipe! If you can't find a full pineapple, you can buy precut spears from the grocery store.

How to Make This Grilled Pineapple Recipe

  • Heat grill (or grill pan) to high heat. Place pineapple on the grill and cook for 3 to 5 minutes on each side, or until dark grill marks appear. After both sides have been grilled, remove and let rest for 3 minutes.
  • Meanwhile, blitz the mint, lime juice and rind, and sugar in a food processor or blender - add a little water if the mixture doesn't come together. It should be a chunky sauce though, so don't add too much water.
  • Top the pineapple with the mint sauce and serve.

Ingredients

  • 1 ripe pineapple, cut into spears
  • 1 teaspoon olive oil
  • 1 cup fresh mint
  • juice of two limes & rind of one lime
  • 3 tablespoons cane sugar

Instructions

  1. Heat grill (or grill pan) to high heat.
  2. Brush the olive oil on the pineapple spears. This will keep them from sticking to the grill or grill pan.
  3. Place pineapple on the grill and cook for 3 to 5 minutes on each side, or until dark grill marks appear. After both sides have been grilled, remove and let rest for 3 minutes.
  4. Meanwhile, blitz the mint, lime juice and rind, and sugar in a food processor or blender - add a little water if the mixture doesn't come together. It should be a chunky sauce though, so don't add too much water.
