Grilled Pineapple with Lime Mint Sauce

This grilled pineapple recipe with minted lime sauce is a gorgeous, simple dessert that makes an already delicious fruit really shine. The grill caramelizes the pineapple to make it super sweet and deeply flavorful. The citrus sauce balances it out with a jolt of tanginess.

Several years ago at a goodbye dinner for a colleague, I had a grilled pineapple carpaccio. I've thought about that dessert more times than I'd care to admit. It was extremely flavorful, but in my efforts to recreate it - thinly slicing pineapple on a mandoline - I've only succeeded in making giant, watery messes. This recipe still hits all those notes, but is infinitely easier to make.

Grilled Pineapple with Lime Mint Sauce

Makes 4 servings | Prep Time: 5 minutes | Total Time: 20 minutes

Ingredients

1 ripe pineapple, cut into spears

1 cup fresh mint

juice of two limes & rind of one lime

3 tablespoons cane sugar

Instructions

Heat grill (or grill pan) to high heat. Place pineapple on grill and cook for 3 to 5 minutes on each side, or until dark grill marks appear. After both sides have been grilled, remove and let rest for 3 minutes. 

Meanwhile, blitz the mint, lime juice and rind, and sugar in a food processor or blender - add a little water if the mixture doesn't come together. It should be a chunky sauce though, so don't add too much water. 

Top the pineapple with the mint sauce and serve.
