Dark Chocolate Bark with Raspberries & Pistachios
Who here likes a super simple, 3-ingredient dessert recipe, that takes less than 5 minutes of hands-on time? You do?! Me too. I'm a dessert bum. I can make a cake with the best of them, but honestly on weeknights I am not going to spend an hour+ on any dessert...no matter how good it tastes. I also refuse to make cookies on weeknights because there's always so many things to clean - measuring cups, beaters, bowls, etc.
So, in an effort to choose something *slightly* healthier than the macaroon shop across the street from my house (I'm not kidding, there is a cart that sells Laduree macaroons two minutes from my apartment - they are the best macaroons in the world - I could eat all of them), I made this delicious dark chocolate bark. Sometimes a girl just needs dessert.
And then sometimes that girl needs to photograph said dessert and share it with all of you. As I type, I kid you not, I have chocolate smeared across my hands. I think the fact that I ate much of this while I photographed it should speak to how delicious it is.
You know what else is great about this dark chocolate bark recipe? It's super flexible. Don't have raspberries (or don't like that their little seeds get stuck in your teeth)? No problem - use strawberries, goji berries, blueberries, or no berries at all. Don't like pistachios? You're crazy! Just kidding, leave them out or sub in walnuts, almonds, pecans, pretzel bits, anything! This is your bark. Do with it as you will.
The raspberry + pistachio combo is a winner though...just so you know.
