What do you make when you have a bad day?
Before, I would have made some rash, bad choice like buying a large candy bar (delicious, but ultimately not the best of choices). Since I've been trying to make choices that truly feed my body well, I made this citrus, berry, and spinach salad with pomegranates and a light vinaigrette, because I knew I needed the energy!
So my no-good-very-bad day began with running so late I couldn't wash my hair, then sitting in traffic for over an hour to get to an event that I didn't want to run. I was setting up an exhibit booth at a conference and it turned out I was 2 hours early (even though I followed the exhibitor rules, everyone else knew the conference started at 9 a.m. and not 7 a.m.).
So, there I was, setting up my little booth and realizing I didn't have the correct cables to run our video, that we brought some of the wrong supplies, and generally feeling gross and un-showered. I went to the cafe to console myself with overpriced food and ended up having the worst sandwich and a stale almond cookie.
Following this I had to fight traffic again to get to a doctor's appointment and then back through traffic to work. All the running around and poor food choices left me feeling really emotionally and physically low. I knew the fridge at home was pretty empty and that I couldn't cobble a really healthy meal together, so settled on getting take-out.
As I drove home from work I wrestled with not wanting to complicate the day further - I really didn't want to stop at the grocery store, but I knew I needed to. I googled "energy boosting food" and came across a list with spinach, berries, almonds, and citrus - amongst other things.
And so, the Bad Day Citrus and Spinach Salad was created. It's easy, refreshing, and bright. It made the end of my day so much better. It reminded me to keep trying to make better choices. I also just think this salad is so pretty - bright, fresh fruit will always make me smile. Sometimes it's the little decisions that can really turn a day around.
Citrus, Berry, and Spinach Salad
Makes 2 large salads | Prep Time: 10 minutes | Total Time: 10 minutes
4 cups fresh baby spinach, rinsed
4 clementines, peeled and sectioned
1 cup of pomegranate seeds (usually one large pomegranate or two small)
1 cup fresh blueberries, rinsed
1 cup fresh strawberries, rinsed and cut
1/4 cup slivered almonds
Juice of two lemons
2 tablespoons olive oil
1 large garlic clove, peeled and minced
salt and pepper, to taste
Rinse the spinach and let it drain. Prepare all the fruit and mix it with the spinach. Sprinkle the top of the salad with the slivered almonds. Mix the lemon juice, olive oil, minced garlic, salt, and pepper and drizzle over the top of the salad.
