Energy Boosting Citrus Berry Salad

Sometimes you just need a little food pick-me-up. When you are feeling low energy, it's easy to want to eat chocolate or something with white sugar to get an immediate hit of energy.

I made this citrus, berry, and spinach salad with almonds and a light vinaigrette because I needed to feel energetic after a long day at work. I came home from work and Googled “energy-boosting foods” and the list I came up with that I could add to a salad included:

  • Spinach
  • Berries, specifically blueberries
  • Citrus
  • Almonds
oranges, lemon, and strawberries

This fabulous, fresh salad not only tastes great, it really does boost your energy and mood. It’s hard not to feel great after you enjoy a bunch of berries and citrus. I’m a big fan of a fully-loaded salad, I’ve shared a bunch of them in the past and some of my favorites include:

Tips for this citrus berry salad

  • Make sure to really whisk the vinaigrette ingredients - it’s best when the olive oil and lemon juice are really combined.
  • Substitute the berries if you have something else on hand (raspberries, blackberries, etc).
  • If you can’t find clementines substitute for mandarine oranges.
  • Pomegranate seeds can make for a great addition.
  • If you can’t find triple-washed spinach at your grocery store, then really rinse the spinach well before adding it to this recipe - nothing is worse than gritty spinach.
  • Toast the almonds if you’d like them to be a bit crunchier.

Ingredients

  • 5 ounces fresh baby spinach, rinsed
  • 4 clementines, peeled and sectioned
  • 1 cup fresh blueberries, rinsed
  • 1 cup fresh strawberries, rinsed and sliced
  • ¼ cup chopped almonds
  • Juice of one lemon
  • 3 tablespoons of olive oil
  • 1 large garlic clove, minced
  • salt and pepper, to taste

Instructions

  1. Prepare all the fruit, mixed it with the spinach and plate it on a large plate or bowl.

  3. Sprinkle the top of the salad with the chopped almonds.
  4. Mix the lemon juice, olive oil, minced garlic, salt, and pepper and drizzle over the top of the salad.
