I can't stop eating these peanut butter stuffed dates that are coated in dark chocolate and nuts. Can not stop.
I actually got the idea for these from my dad, who has peanut butter stuffed dates on a recent work trip. I consider peanut butter a best friend in the food pantheon, so I knew I was going to try it as soon as he suggested it. Dates are essentially caramel in a slightly healthier format, and PB and caramel are an awesome combo, so I knew this was going to be pretty good.
Also, I learned a little trick with dates several years ago that they are awesome when refrigerated or frozen. They like a little chill. And, I love dark chocolate on anything, so clearly it had to be added!
On a side note, I had a piece of homemade, candied orange peel covered in dark chocolate today. Oh my. I will be trying that in my kitchen very soon.
Have you ever seen dates before they're harvested? They're really beautiful before they're ripe. They hang in lovely rows and are a stunning bright green. When they start to ripen, a bag is put around them, so they don't fall to the ground. They start shriveling and turning brown and fall to the bottom of the bag. One time a friend of mine kindly referred to them as "saggy date bags". Food is so weird. Where did we ever get the idea to cultivate these strange little, squishy pieces of fruit?
Food weirdness aside, you'll enjoy these decadent little treats. If you don't like the flavors of caramel, chocolate, and peanut butter together then I'm going to need you to reevaluate some of your life choices... Because, seriously, these flavors are made for each other.
