Does the world need another apple crisp recipe? Normally I would say no, but this recipe has one special tweak that I think makes it worth sharing - before baking the apples in the crisp, they are caramelized in a sauce pan which leads to a far richer, more complex flavor. It's also reasonably low in sugar and packs in a good deal of oats, making it one of the healthier crisp recipes I've tried.
I also went a little heavy on the apples in this recipe, but they are especially lovely this time of year and I found some wonderful, large Honeycrisps that I thought would be perfect. I think most apples taste great in crisps and crumbles, but especially those that can keep their shape through the baking process - I'd recommend Honeycrisps, Golden Delicious, Granny Smiths, and Braeburns for baking. I would not recommend using Red Delicious or Galas for this recipe however - they're better snacking apples, as they don't hold up well under 45 minutes of oven heat.
