Hi.

Welcome to my food blog! I document and photograph my favorite healthy recipes. Enjoy!

Antipasto Skewers

Antipasto Skewers

Right, so I blatantly ripped off this idea from a lovely friend of mine who is both an event planner and a natural born hostess. She also likes succulents - so I basically think she's the coolest person. These antipasto skewers make for a delicious light dinner or canapés night and are as cute as they are easy.

Antipasto Skewers - a quick, easy, & vegetarian dinner made from cheese tortellini, olives, cherries, mozzarella, and artichokes.

You can mix and match what's on your skewers, but I wanted a blend of salty and refreshing, so I went with: artichokes, cherry tomatoes (mix of colors), cheese tortellini, olives (green & black), fresh basil, and mozzarella cheese chunks.

If I could change one thing about these skewers it would be that the mozzarella is not in an adorable ball shape. Sadly, the store I was shopping at did not have small moz balls, so I just cut up some big ones. I am not a multi-store shopper. I truly hate going to multiple stores to get everything, so I'm always changing recipes mid-grocery-store-aisle and debating over potential substitutions.

Enjoy this quick, cute, and simple recipe. I hope you have a chance to share it with some friends or family this week!
