Almond Milk & Vanilla Steel Cut Oats with a Peach Compote
Rich, creamy oatmeal. Yum! This is next level oatmeal with a whole vanilla pod and almond milk. The compote can be made from any fruit, but I thought peaches would be an especially nice treat.
I bought the vanilla pods while shopping with my sister at a super cute kitchen store. Whenever I go into a store that sells pots and pans and kitchen utensils I always want one of everything. I love how highly specific things are - olive pitters, eggs slicers, oven mitts just for cast iron pans.
I don't know about you though, but I find myself buying all these things and forgetting to use them. I have my trusty kitchen friends - a great cutting board, a chef's knife, a great pot, and a silicone spatula. If you took everything else away from me, I wouldn't be thrilled, but I'm pretty sure I could still get it done in the kitchen.
Alton Brown won't buy anything for the kitchen that is single-purpose. I like that policy, but sometimes the one use things can really simplify our lives. Probably the single greatest one use item I have is my rice cooker. Just whack in the rice and water and forget it for 30 minutes - except for the times I've actually forgotten to turn it on...yikes!
Back to the oatmeal - I added the peach compote and the blood orange for flavor, but there's all sorts of other wonderful additions. Some of my favorites include - brown sugar, dried cherries or cranberries, cinnamon, and slivered almonds.
